How to make Jam with fresh apricots?
At first, making a jam felt like rocket science, and honestly, it’s not. It hardly takes more than 5 minutes if your apricots are very ripe. But, can take longer if the apricots are not ripe or soft, so time will vary on the ripeness of the apricot.
Fresh Apricot Jam Recipe
Materials
- 4 Small Apricots
- 1/4 Cup Sugar (Add more if you want sweeter)
Instructions
- Wash and Dry Apricots, then remove seeds
- Cut each apricot in halves or quarters (if you like chunks in your jam, leave it in halves)
- Take a saucepan, add the apricots, sugar and cook on medium heat
- Ensure to keep an eye on the heat and keep stiring until sugar is fully dissolved and apricots are soft
Tips for perfect homemade Jam
- If you want to use less sugar than recommended, use sweet apricots
- If you want to cut the “jam making” time, use very ripe apricots
- For chunks in your jam, cut apricots in halves instead of smaller 1/4″ chunks

Apricot bars made with Fresh Apricots
This recipe can be made with canned apricots, jam, or preserves. I have baked a couple of different apricot bars but my favorite was with the homemade jam recipe. I made the apricots jam with 6 oz of apricots (mostly the ones that were ripe) since cook time for the jam depends on the ripeness of the apricots. Also, the sweeter your apricots are, the less sugar you can use to balance off the taste. So, I have added only 1/2 cup sugar but feel free to add less or more
Apricot and Coconut Bar
Equipment
- Oven
Materials
- 1/4 Cup Sugar
- 1 Medium Egg
- 1/4 Tsp Vanilla Extract
- 1 Cup all purpose flour
- 1/4 Tsp Baking Powder
- 2/3 Cup Coconut flakes /powdered
- 1/4 Cup Chopped Pecans
- 6 Oz Apricot Jam
- 1 Cup Softened Butter
- Pinch Salt
Instructions
- Preheat Oven to 350 F and butter a 8" pan
- In a medium sized bowl, whisk flour, sugar and baking powder. Once the dry ingridients have been mixed well
- In a seperate bow, whisk butter, egg and vanilla extract, whisk until it is a creamy mixture
- Fold in the dry ingridients to the creamy mixture, add in the coconut flakes and 1/2 of your chopped pecans
- Press 2/3rd of the mixture in your pan, then spread the apricot jam, layer with the remaining mixture.
- Top with pecans and coconut flakes
