1. No bake protein bars
Protein bars are easy to make and really fill you up. This is a no mess, easy to put together bars not only for your road trips but also can be made for lunch and snack time for any time of the day. These protein bars are full of protein (duh), fiber and healthy fats that will keep you full. To make these delicious Peanut butter & oatmeal no bake healthy bars; you will need the following
Ingredients :
1 & 1/2 Cups Oats
1 TBSP Sesame Seeds
3/4 Cup Peanut Butter (No sugar added)
1 & 1/2 TBSP Flax seeds
One TBSP or as need Coconut Oil (Healthy Fat)
One & 1/2 TBSP Chia Seed
As needed Honey (Natural Sweetener)
Optional for Topping:
1/2 Cup Chocolate chips
1 TBSP Coconut Flakes
Instructions:
- Take a large bowl and mix together dry ingredients (Oats, Chia, Flax and sesame seeds) and set aside
2. In a microwave safe bowl, mix the wet ingredients (Peanut butter, coconut oil and honey) microwave these ingredients for 15 secs, stir well and mix it into the large bowl of dry ingredients. Mix until all ingridients are well combined
3. Pour the mixture into an 8X8 lined pan, Press the mixture well into all the corners of the pan and set in refrigerator for 1 hour to chill
To make the topping:
1, Melt the chocolate with some honey at 15 seconds intervals. Once melted spread the chocolate over the bars.
2. Sprinkle the coconut flakes
Set the pan back in refrigerator for 10-15 minutes
3. Cut it into bars, enjoy your creation. And, then store in an air tight container for your road trip
2. Apple and Almond Butter
This is a simple, crunchy way to get some healthy fat and fiber
2 Apples of your choice sliced (prep more depedning on your family size)
2-3 TBSP of (No sugar Added) Almond Butter in an air tight container
Use these containers to store for a healthy snack when you are hungry, these containers are great for storing meal prep sides, microwave and freezer safe. These are good snacks for the whole family. Kids will love it and forget about the outside snacks (I hope so)

3. No Bake Date (Chocolate) Bites (without the chcolate)
These no bake bites are one of my top favorite snacks ever. It Helps me to satisy my chocolate craving (without the actual choclate) Dates are a natural sweetner and have lots of fiber (so works really good with no bake healthy desserts)
Ingredients:
1 Cup nuts (of your choice, Walnuts, Almonds, Cashews, whatever is really available)
8-10 large dates
3 tablespoon of Cocoa Powder
1 TBSP water (only if needed to get the ingredients to stick, though dates should do that)
For Topping:
1 TBSP coconut flakes & or
1TBSP cocoa powder
Instructions:
- Remove the Pitt from from your dates
- Using your favorite food processer, blend all ingredients (Nuts of your choice, dates, cocoa powder) and process until the mixture forms into sticky dough like texture. Add water little by little if really needed to blend and make the ingredients stick.
- Scrape off the mixture like dough from the food process.er And, form TBSP size balls
- Dust your new favrote snack with with cocoa pwder or conut flakes. Refriegerate for 10 minutes
- Store in an air tight container for your road trip. You can also have these on the go to satisfy your choclate craving with these healthy snack
4. Trail Mix
Store bought trail mixes comes in all sorts of variety. But each of these variety may have something that you may not be a fan or it may not be a healthy option for you. So ditch the stores and build up your own healthy trail mix with your favorite items.
Ingredients
Main Categories listed. Build it with the choice of your favorite
Nuts (choose your favorite nuts, examples: Cashews, Walnuts, pecans, almonds)
Seeds (choose your favorite pumpkin, sunflower, etc)
Dried Fruit (raisins, caranberries etc)
Extra (like chocolate, yoghurt pieces, chocolate covered pretzel bites, m&ms etc.)
Instructions:
- Choose your favorite choice of nuts. You can use multiple kind of nuts, I always like to get Pecans, Almonds and Cashews in equal quantities
- Add the seeds to the mixture
- Throw in your favorite dried fruit, for me its raisins and cranberries (choose one option)
- EXTRAS is my favorite part, so I like to add bits of dark chocolate, this adds some fun
- Mix all the ingredients well and store in an air tight container for your next road trip
5. Frozen yoghurt cups (like cupcakes with the cake)
Fun for the whole family. This is a good replacement for your frozen sweet cravings like ice cream. Only sucky part is that you will have to carry a cooler on your trip to keep them fresh and intact.
Ingredients
One Cup whole milk Plain yoghurt
1 TBSP Honey
One TSP Vanilla extract
For Toppings:
Fresh berries of your choice or whatever is avialble
Chocolate chips
Instructions:
- In a bowl, stir together your ingredients (yoghurt, honey and vanilla extract well) and set aside
- Line your muffin tin/cup cake tins with silicone liners. If you do not have silicone liners, use regular ones. Though silicone liners make the process a lot easier and fun
- Scoop your yoghurt mixture into the prepped muffin tins
- Top the yoghurt cups with your favorite toppings
- Freeze for 1-2 hours or until solid
- Transfer into freezer bag and enjoy on your next road trip
6. Boiled Eggs
This is a low calorie food and is rich in calcium. It also has with has a high source of protein. Prepare 1-2 soft to heard boiled eggs, depending on your preference.
You can layer them on a sandwich or salad of your choice.
I like my eggs plain boiled sprinkled with a dash of salt and pepper. Eggs as a snack, keeps me full for longer
7. Greek yoghurt parfait
I love prepping yoghurt parfait the night before and have it as a breakfast for my road trip (as I mostly tend to leave early in the morning) Its so good, almost like having a dessert first thing the morning (without actually having dessert). And, really just sets the mood for the day. Off course, its good for any day for breakfast or even for dessert. Here how to make it:
Ingredients:
Greek yoghurt (use any flavor you prefer) I use plain
Berries (of your choice) I use cranberries and strawberries to top
Granola
Instructions:
Layer your ingredients starting with berries at the bottom, yoghurt, granola
Chill in the refrigerator for 10-15 minutes and enjoy for parfait
