Fresh Corn – How to Pick
If you are not happy with the canned corn stuff and are looking to prepare the fresh corn salad. Or got lucky like me and have some corn growing in your backyard or your farmers market overflow. Regardless, of the reason, you want to use fresh corn. Here are some ways to pick the perfect corn on the cob to pick for your corn needs:
- If you are buying corn still in the husk, pay attention to the corn hair (hair-like silky covering beneath the husk) Ensure that these hair are brown; this means its good to pick and ripe
- If the corn hair is dry and brown; unfortunately skip this one as it may be getting dry and past its best days (unfortunately!)
- Also, ensure that the husks (big green covers i.e. leaves on the corn) are deep green. If the husks are loose, and the color is turning brownish and dry, skip as these are drying and past their ripe days
How to Prepare
Once you have picked your sweet corn on the cob. You will want to remove the husk and the silky hair, and to do so. You will want to peel it off in the same direction by holding the husk top firmly and peeling downward (it can get messy) and once the husk and most of the silky hair are removed, dampen a paper towel and clean off the corn on the cob of any leftover silky corn hair
Then, take a medium pan, fill it up with water and add 1 Tbsp salt to the pot (this will help bring out the flavor. Once the water has come to boiling, place your corn on the cob carefully using tongs (ensuring no water spills back at you) its the pot is smaller, you can cut the corn on the cob in halves
Corn should take approximately 5-7 minutes to be ready; if you had put the corn cobs into boiling water begin with. After about 5 minutes, using tongs pull one of the corn on the cob and ensure that it looks juicy plumper, and soft (just a hint that it is ready) if not, return to water to boil for another couple of minutes
What to pair this salad with
Sometimes it is hard to decide what can I pair the salad well with. Well, corn salad is great to make for summer afternoons, it’s so colorful and reminds me of the sun. A favorite during picnic and barbeque parties sure. I would recommend pairing this corn salad with grilled chicken, the tangy lime corn salad will take your grilled chicken meal to the next level
Alternatives to healthier options: If you are looking to keep a diet, then avoid any store-bought salad dressing and instead go with some organic extra virgin olive oil, lime juice, and salt and pepper to taste and you will be a happy healthy salad eater

Summer Corn Salad Recipe
Materials
- 2 Cup Corn Kernals
- 1 Medium Cucumber
- 1 Medium Tomato
- 1 Medium Avocado
- 1/4 Cup Baby Spinach (Optional) use any green of your choice or herbs such as cilantro, mint, parsley
Salad Dressing
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Freshly Squeezed Lime
- Salt and Pepper to taste
Instructions
- Dice into cubes tomato, cucumber, avocado and set aside
- Take a medium Bowl, combine corn, cucmber, tomato and avocado
- Finely add in your herbs and greens
- In a seperate small bowl, combine Olive oil and Lemon
- Pour your tangy dressing onto your medium bowl salad and enjoy!
