Easy Summer Peach Salad Recipe
Materials
- 1 Medium Red onion
- 1 Cup Baby Spinach
- 1 Cup Lettuce
- 1 Cup Fresh or canned Peaches
- 1/4 Cup Pecans
- Crumbles of Goat Cheese As needed
Home Made Salad Dressing
- 3/4 Cup Olive Oil
- 1/4 Cup White Vinegar or Balsamic Vinegar
- 1/2 Tsp Red Chilli Flakes
- Salt and Pepper to taste
Instructions
- Thinly slice red onion, set aside
- Wash and Pat dry Spinach, lettuce and any spring greens of your choice
- Wash and slice peaches. If you are using canned peach, drain the water and set aside
- This is optional step, otherwise use as is – Take a medium size pan and saute the peaches with 1 tablespoon of olive oil until golden and set aside
- This is an optional step, otherwise use as is – Lightly toast pecans in the same pan and set aside
- Take a Large Bowl, add the spring greens, peaches (sauted or drianed from the cann) whatver you prefer. Combine all ingredients well. Throw in your sliced onions and pecans and top with fresh crumbles of goat cheese for added flavor

- Mix all ingredients in a sealed container, shake well
- Keep refriegerated for best results
To Sautee your Peaches
Wash, pat dry, and slice your fresh peaches. If you are using canned peaches, drain the water and set it aside. In a medium frying pan, place some olive oil on medium heat. Add the peaches to the pan and let it turn golden, this should take approximately 2-3 minutes
To toast your Pecans
Take a medium-sized pan and place pecan halves over medium heat. Stir the pecan halves until they get toasty and golden. This should take approximately 3-4 minutes. Cool and Set aside until ready to toss into the salad
Tips on Canned peach for salad
I enjoy the canned peaches as much as fresh peaches. For best results always drain the water from the can (saving only the thicker water) and adding to the dressing as an added flavor to the salad
Also, adding grilled peaches to your salad adds a tangy taste and makes it perfect to pair with your barbeque
Adding goat cheese adds the summer fanciness and some taste to cool off
