Homemade Strawberry Cheesecake Recipe

This is my favorite and a very simple homemade strawberry cheesecake recipe and makes 6 large cookies. These cookies will bake to perfection and are really soft and perfect for anytime of the year.

Materials

  • 1/2 Cup Softened Butter
  • 1 & 1/2 Cup All-Purpose Flour
  • 1/4 Cup Fresh Strawberries
  • 3/4 Cup Sugar or as desired
  • 1 Medium Egg
  • 1/2 Tsp Vanilla Extract
  • 1/2 Tsp Baking Soda

Filling

  • 1/4 Cup Cream Cheese
  • 1 Oz Powdered Sugar

Instructions

Cream Cheese Filling

  • In a mixing bowl, mix powdered sugar and cream cheese until smooth
  • Line a tray with parchment paper, and place 7-8 teaspoon balls of cream cheese
  • Place the tray in the freezer for atleast 45 minutes or until cheese balls are completely solid

Instructions

  • In a medium bowl, mix all the dry ingredients flour, baking soda, and sugar
  • In a seperate bowl, whisk butter, egg, and vanilla extract, then slowky add in the dry ingredients and blend well
  • Gently fold in diced strawberries
  • Take a baking sheet and line with parchment paper, scoop 2 tablespoonful onto the sheet, this should make 6-7 large cookies
  • Press the solid cheese balls onto the cookies (i put cheese in the center of the cookie. and add a little batter to the top to cover it
  • Preheat Oven to 350 F and bake the cookies for 15 minutes or until golden
  • Once golden, remove from oven and let them cool completely
  • Enjoy soft and fresh homemade strawberry cheesecake cookies
